Definition of Term

roe-off
(English) When abalone or scallops are shelled, the `gut' (including the roe) is removed from the meat (the white muscle block which joins the shells). Usually these shellfish are marketed with the red or orange roe (gonad) still attached; however, in some markets or for some species, meat without the roe is preferred (e.g., doughboy scallops). (French) Quand les ormeaux ou les escalopes sont décortiquées, l'intestin (y compris la rogue) est retiré de la chaire (le bloc du muscle blanc qui joint les coquilles).
