Definition of Term

Freeze drying
(English) A process of dehydration under vacuum starting from the frozen state. The frozen substance having been placed under reduced pressure, the existing ice is sublimated (directly transformed to vapor), leaving a fine, porous structure favorouble to re-hydration. (See also: Dehydrated fish, Dried fish)
